Getting Wild With Wild Game

Participants will work together to come up with a date and time in January

“Getting Wild with Wild Game” was a hugely popular cooking show developed by UM Wellness and UM Dining. The program goal was to teach safe and delicious ways to prepare Montana’s abundant wild food sources. After many years of success, the program came to a painful end due to health code regulations. However, the legacy of the program now lives on as UM Dining is graciously supporting Chef Loparco’s use of the name to benefit the Jeannette Rankin Peace Center.

Mark Loparco is offering three 45-minutes information-packed cooking classes via Zoom. He will offer tips, suggestions, cooking techniques, and recipes in this on-line format. In the first class, he will feature red meats such as deer, elk, or antelope. He will demonstrate recipes that use ground meat. The second class will be dedicated to whole muscle cuts and recipes. Session three will either be based on requests by participants or may feature non-traditional cuts such as neck roast, shanks or jerky.

Class participation is open to as many participants as Mark can handle on Zoom. We are offering this class as a 3 session series.

Mark feels fortunate to have worked in the food and hospitality industry for his entire career. He says, "there is little more rewarding than seeing someone enjoy food that you have prepared for them." His career focus has been on local seasonal foods. Since moving to Montana, he noticed that many people rely on wild food and subsistence food gathering, in particular, wild meat. He saw a gap between harvesting wild meats and knowing what to do with them. His goal has been to teach people how to safely handle wild game from the time of harvest through preparation into a delicious meal.
