Portuguese fisherman have been netting and trading cod since the 15th century and bacalhau - dried, salted cod - is a national food staple of this coastal country. Tonight Gulsidel Velasquez will start with bacalhau, but that's barely a hint of what you will taste and learn to prepare. He'll also incorporate his fondness for ingredients like cinnamon, vanilla and curry powder into a selection of traditional Portugese dishes. become a local favorite in our school and his celebrations of global flavors fill very quickly.
