Jack cheeses - Monterey, Colby and Pepper - have simple names but a somewhat less clear origin. There is a debate about how this American semi-hard cheese came to be. Was it developed by Mexican Franciscan friars or the brainchild of a Californian businessman named Jack? GFS Cheese Buyer Jennie Gregory will clarify the history and discuss the cheesemaking science that makes Jack cheeses such a favorite. And Emily Walter, GFS Cooking School Manager, will prepare a few Jack-inspired dishes for you to sample and recommend some tasty beer and wine pairings too.
