Andy Ricker, chef and owner of Portland, Oregon's famed Pok Pok restaurant, spent over two decades researching Thai cuisine. Pok Pok, named for the sound a wooden pestle makes when it strikes a clay mortar, operates out of a repurposed old home in a residential neighborhood and is also the title of Ricker's critically acclaimed cookbook. Tonight Red Bird chef Matt Cornette will present a few of Ricker's impeccably tested recipes in the latest edition of our GFS Cookbook Club classes. Matt will highlight some of the tricks he's gleaned from the cookbook and demonstrate nuances he's learned while mashing his own fresh curries from scratch.
