This Month at Bugs and Brews: Entomophagy – the art of eating insects

Have you ever considered adding insects to your diet? Ever tasted a toasted cricket? Ever wondered how crickets compare to cows when it comes to protein production? Join us to learn all about the future of insects as food, how supplementing them into your diet can help fight climate change and how Missoula led the charge for the state of Montana to authorize the use of insects as food.

Michael Dorshorst is a licensed Establishment and Land Environmental Health Specialist with the Missoula City/County Health Department. In 2015 he spearheaded the coordination of the different state agencies necessary to authorize the use of insects as food in Missoula Co., which prompted the allowance at the state level. He has additionally been working with MCPS’s Agriculture Education program to assess the feasibility of starting an entomophagic production and harvest operation.

The Insectarium will be open for exploration at 6:30, before the speaker, and after, until 8:30pm.
