Prior to 16th century Spanish exploration and conquest, the indigenous Olmec, Maya and Aztecs of Mesoamerica developed complex cultures we now recognize for innovations in art, astronomy and farming. They weren't bad cooks either. Masa , Spanish for dough, was a clever contribution to the health of the Mesoamerican diet and it's still a staple of the region's cuisine. This evening Tom Siegel, our resident food scholar and former Montana Chef of the Year, will demonstrate a variety of masa preparations and recipes that highlight masa's ubiquity and versatility in Mexican and Central American cuisines. $35
